Pavlova is New Zealand's favourite dessert - why not try making your own?
This is a simple recipe, you really can't go wrong with this!
4 egg whites
1 cup caster sugar
2 teaspoons cornflour
1 teaspoon vinegar
1 teaspoon vanilla essence
Beat egg whites until stiff. Gradually beat in sugar and when really stiff and glossy fold in cornflour, vinegar and vanilla essence. Pile into a circle on a foil-lined baking tray. Smooth top and mark ridges up the sides with a knife if desired.
Bake at 120 Celcius for 15 minutes, then lower heat to 100C and continue to cook a further 45 minutes. Turn off heat and leave pavlova in oven until cool.
Pile high with whipped cream and fruit of your choice - strawberries, raspberries, kiwifruit, pineapple, passionfruit, peaches etc. If no fruit available use grated chocolate and chopped nuts.
